Makes: 12 Muffins 



1 cup all-purpose flour
1 cup white whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon allspice

¾ c chocolate chips
 


In a medium bowl, whisk together flours, baking powder, baking soda, salt, nutmeg and allspice. Fold in the chocolate chips and walnuts.

In a large mixing bowl, cream together butter and sugar. Mix in the egg, mashed bananas and milk. Stir the dry ingredients into the butter-sugar mixture.

Evenly divide the batter between a 12 cup muffin tin coated with nonstick spray. Bake about 20 minutes. Remove from the oven and let cool for 5 to 10 minutes before carefully removing them from the pan to a wire rack to cool completely.


Banana Chocolate Chip Muffins

1 c chopped walnuts

4 tablespoons unsalted butter -- softened
1 cup granulated sugar
1 large egg
2 med overripe bananas -- mashed (about 3/4 cup)
1/3 cup milk
Preheat oven to 350 degrees.

Makes: 1 Salsa



This delicious, spicy salsa makes a great topping for chicken, fried or grilled pork or with your favorite tortilla chips.



INGREDIENTS:
1 pound fresh tomatoes (I like a juicy beefsteak tomato in my salsa)
2 tablespoons chopped jalapeno peppers
6 green onions, with 2 to 3 inches of green, chopped
1 cup fresh cilantro leaves
1 clove garlic, chopped
Salt and pepper, to taste


PREPARATION:
Place tomatoes in food processor with the peppers, onions, cilantro and garlic. Pulse until coarsely chopped. You can drain off excess liquids if you like your salsa a little thicker then add salt and pepper to taste.

Cinnamon Apple Muffins

Cinnamon Strawberry Bread

Makes: 12 Muffins

1 1/2 cups all-purpose flour

3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/3 cup vegetable oil
1 egg

 

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Grease six muffin cups or line with paper muffin liners.
Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups, filling to the top of the cup.
In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 teaspoons cinnamon. Mix together with fork and sprinkle over unbaked muffins.
Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.

16 oz. strawberries
2 cups sugar
1.5 cups canola oil
4 eggs
3 cups all-purpose flour
3 tsp ground cinnamon
1 tsp baking soda
1 tsp salt

 

Grease and flour the pan.
Combine sugar and oil.
Beat eggs, and add to sugar and oil.
Slightly mash the strawberries with a fork, and add that to the mix.
Add the rest of the ingredients. Mix well.
Bake at 350 degrees for 1 hour.

Two Minutes Tomato Salsa

1/3 cup milk
2 apples - peeled, cored and chopped

1/2 cup white sugar
1/3 cup all-purpose flour
1/2 cup butter, cubed
1 1/2 teaspoons ground cinnamon
